Details of the new BlueIguana Cantina, a casual poolside restaurant evoking the feel of a fun, relaxed Mexican beachside dining spot, were unveiled at a press conference earlier this month to announce Fun Ship 2.0, Carnival’s $500 million, multi-year initiative that will completely transform the line’s guest experience.
BlueIguana Cantina will debut on the Carnival Liberty following a scheduled refurbishment to be completed later this month. The complimentary new dining venue, located on Lido Deck adjacent to the main pool area, will serve delicious tacos and burritos on freshly made tortillas throughout the day.
The restaurant will feature a glass-encased automated tortilla-making machine with a serving station on either side — one for tacos, one for burritos. As they wait for their order, guests can marvel at the workings of the tortilla machine, which is capable of producing upwards of 700 wraps per hour.
Fish, chicken and pork tacos will be offered, as well as chicken, beef and shrimp burritos served on either whole wheat or jalapeno pepper tortillas. Burrito lovers can select from a variety of fillings, including pinto beans, cilantro-lime rice, black beans, roasted corn, charred green peppers, sautéed onions, lettuce, tomato and guacamole and watch as their dish is made right before their eyes.
Guests can further customize their taco or burrito at a nearby salsa station with their favorite fresh toppings, including pico de gallo, Mexican crema fresca, sliced vegetables, watermelon and red and green tomatillo salsas, corn salsa, cilantro, shredded cheese and assorted hot sauces.
BlueIguana Cantina’s colorful décor features a bright blue and rich wood-grain scheme with Mexican accents such as ceramic tiles and flower baskets in its serving and dining areas. Dining tables near the service area will be topped with striking Mexican tiles.
Adjacent to BlueIguana Cantina portside on the Lido Pool Deck is the similarly themed and decorated poolside BlueIguana Tequila Bar. BlueIguana Tequila Bar specializes in refreshing tequila-based frozen drinks and Mexican beers.
In addition to Carnival Liberty, several other ships in the Carnival fleet will receive Fun Ship 2.0 enhancements, including BlueIguana Cantina and BlueIguana Tequila Bar, over the course of the next few years.
